Thai Chicken Meatballs
This dish is made with pad thai noodles. Meatballs: ground chicken, almond flour, green curry paste, scallion, garlic, onion, bell peppers, fresh ginger juice, coconut aminos, cilantro, basil, lime, canola oil, salt, pepper. Sauce: canola oil, onion, garlic, salt, pepper, peanut butter, green curry paste, coconut milk, lime juice, fresh ginger, juice, honey, chicken stock, fish sauce, coconut aminos, lemongrass, cilantro, red chili oil. Vegetables: Bok Choy, yellow squash, red onion, broccoli and snap peas.
(Paleo version comes without noodles, and has extra vegetables)
Family Size portions available - serves 4 'Healthy Balance' meals in an oven ready dish. Preheat to 350F, remove the lid, and re-heat for 15 minutes.
