This is our unique twist on the classic Thai Coconut Soup! Using tofu instead of chicken, we created an amazingly flavorful, vegan option for those chilly fall nights or cool winter days! Coconut, curry, lime leaf, ginger, cilantro, lemon grass, and palm sugar are combined and put on top of a medley of potatoes and bok choy for an authentic Thai dish the whole family will enjoy.
This dish is made with silken tofu, lemngrass, lime leaf, garlic, white onion, ginger, yellow curry paste, hot pepper powder, cilantro, spinach, scallions, coconut milk, palm sugar, golden curry powder, xanthan gum, yukon potatoes, bok choy, red bell pepper, red onion, yellow squash, cremini mushrooms, salt, and pepper.
Paleo version comes without potatoes, and has extra vegetables.
Family Size portions available - serves 4 'Healthy Balance' meals in an oven ready dish. Preheat to 350F, remove the lid, and re-heat for 15 minutes.
